What to write when you have no job yet

Is a BAJA or Formula Student team worth a whole section?
It is worth an experience entry, not a section: your role, the team size, the budget and the rank. Recruiters value it because it is the closest thing to a job a mechanical student can show.
Should I list core subjects?
One details line with four or five that match the role: Machine Design, Manufacturing Processes, Thermodynamics, CAD/CAM. A full syllabus reads as padding.
